Mint Brownie Cookies
A mix of brownies and peppermint patties make these cookies deliciously minty!
Ingredients
⅔ cup shortening
1⅓ cups packed light brown sugar
1 TB water
1 tsp. vanilla extract
2 eggs
1¼ cups flour
⅓ cup cocoa
½ tsp. salt
¼ tsp. baking soda
8 oz. pkg. YORK Mini Peppermint Patties
Instructions
Heat oven to 350 degrees.
Beat shortening, brown sugar, water, and vanilla in a large bowl on medium speed until well blended.
Add eggs; beat well.
Stir together flour, cocoa, salt and baking soda.
Gradually add to sugar mixture, beating on low speed until blended.
Stir in WHOLE peppermint patties. {the tendency is to cut the patties in half, but DON'T! They'll ooze and melt and make a mess!}
Drop by rounded tablespoons 2" apart onto engrossed cookie sheet.
Bake 7-9 minutes. Cookies will appear soft and moist. Do not overbake.
Cook 2 minutes and remove to wire rack for cooling.
